Sustainably-raised and Local to WNC

I had the pleasure of volunteering with Rick and Catherine Topel on their farm, Smoky Mountain Mangalitsa during ASAP‘s Farm Tour. They raise Mangalitsa pigs on their 95-acre farm in Waynesville, NC.

Mangalitsa’s are wooly-haired pigs that were bred in the early 19th century for Hungarian royalty. As of 1997, there were thought to be only 200 left! Farmers like Rick and Catherine have been helping to restore the breed’s numbers.

These pigs in particular enjoy a luxurious lifestyle with pasture rotation where they can wallow, climb hills (nice muscle!), and forage for insects, herbs, and roots. They are fed a premium non-GMO feed (no corn or soy!), and enjoy mountain life for 18 months before taken to market (vs the typical 6-7 months for market pigs).

TIP! You can also use Mangalitsa lard like you would use olive oil. If pork is optimal in your diet, try using lard as salad dressing or spread like butter or creamy cheeses.
