Hairy Bittercress

Have you heard of Hairy Bittercress? It’s probably right in front of you, or been mowed over if you like that short, tidy lawn. 

It’s edible, and as a cruciferous vegetable, it tastes like broccoli or brussels sprouts. Many prefer the leaves to the tiny white blossoms and stems, but yours truly enjoys the whole fibrous lot! It’s high in vitamin C, calcium, magnesium, beta-carotene and those amazing antioxidants that only Mama Earth can produce!

Here’s an easy recipe for a lunch or snack with your Very Local Edible (gluten-free and vegan!)

Brown rice cakes topped with lima bean hummus, roasted red peppers, avocado, sunflower seeds, topped with hairy bittercress. Tangy, filling, and full of happy proteins and fat!.

Bonus Tip! For those who are cutting back on the salt, but want a good source of vegan iodine, lima beans are a great source of it, along with prunes and seaweed.
